By far the hardest part of camping is prep.  What to pack and what to eat are typically the biggest decisions you will make during a weekend camping trip.  Try these delish, easy, and healthy meals to take the guesswork out of your getaway weekend meal prep!

Finished that exhausting first round of skiing and ready for a pick-me-up?  Try this recipe for a refreshing take on campsite-lunch:

Shrimp Tacos and Mexican Corn Salad

For the tacos you will need:  1 lb raw, organic shrimp (store over ice in your cooler), 1 tsp coconut oil, corn tortillas, hot sauce.

To cook the shrimp, add coconut oil to tinfoil and place on your bbq grill.  Add the shrimp and cook for 2 minutes each side.  Warm your tortillas on the grill and add the cooked shrimp to your tortillas.  Finish with a spoonful of your Mexican corn salad and top with a dash of hot sauce.
